Monica, the recipe developer at Plantasy Foods, is coeliac and sensitive to dairy and eggs. Her daughter is allergic to dairy and eggs and sensitive to gluten. Talk about bad luck!
She was tasked with creating a range of packet mixes that were gluten, dairy, egg and nut free, easy to make with minimal additional ingredients, versatile and, most importantly, delicious. Not only did Monica manage to do this, she also fit in a bunch of nutritional organic ingredients to encourage healthy eating, whether you know it or not!
